Materials:
Tofu 1 piece, minced pork, bean paste, pepper, ginger, garlic, shallots, coriander, salt, soy sauce and cooking wine.
Practice:
1. Cut tofu into small pieces and blanch it in boiling water for later use;
2. Pour a little oil into the pot, add pepper and stir-fry until fragrant, then take it out, and add bean paste to the remaining oil to saute until fragrant;
3. Add minced ginger and minced garlic and stir-fry until the fragrance comes out;
4. Add minced pork and stir-fry quickly until it breaks, and add cooking wine and light soy sauce to taste;
5. Pour in the boiled tofu pieces, slowly mix the seasoning and tofu with a small fire and add a little juice;
6. Sprinkle a little salt before serving, then sprinkle with shallots and parsley.
The Mapo tofu made in this way is delicate, spicy and delicious, which is very suitable for eating with rice.
