Main Ingredients: Chicken claw; Ingredients: Ginger, Garlic, Dried Chili Peppers, Sugar, Salt, Five Spice Powder, Cooking Wine, Soy Sauce, Old Soy Sauce, Oyster Sauce, White pepper, Lao Gan Ma black bean sauce, sesame oil, white vinegar, honey.

Put the cleaned and cut chicken claws into the water, add the cooking wine and ginger slices and cook for about 2 minutes, then fish out.

Soak the chicken claws in water to rinse off the foam.

Dry the chicken claws to dry the water on the skin and then brush with a mixture of honey and white vinegar, then dry again to prevent frying is splashing oil.

Pour the oil into the pot and heat it to 50-60%, then put the chicken claws into the frying. (Remember to cover the pan with a lid and be careful not to get splashed by the oil.)

Remove the chicken claws from the pan and drain the oil, then place them in cold water (iced water is better) and soak for at least 1 hour.

While soaking, prepare the seasoning by mixing ginger, garlic, dried chili peppers, sugar, salt, five-spice powder, cooking wine, light soy sauce, dark soy sauce, oyster sauce, white pepper, Laoganma black bean sauce and sesame oil into a sauce to be used.

Plate the soaked chicken claws and steam them in a steamer for about 15 minutes.

After 15 minutes, pour the sauce over the steamed chicken claws, mix well, and continue steaming for another 20 minutes.
