The method is as follows:
1. Wash the purchased shrimps, cut off the beards, use a toothpick to pick out the shrimp lines, wash them and drain them and set aside. Cut green onions into sections and slice ginger.
2. Put oil in the pot. When the oil temperature is 70% hot, add the shrimps and fry until they turn red and take them out.
3. Leave the oil in the pot, add 1 tablespoon of bean paste, onions, garlic, and peppercorns and stir-fry until fragrant. Pour in the dried chili peppers and stir-fry for 10 seconds. Add the shrimp, 1 spoon of cooking wine, 1 spoon of light soy sauce, half a spoon of oyster sauce, salt and sugar. Stir-fry for a while. When the juice is almost absorbed by the shrimp, add white sesame seeds and stir-fry quickly. Stir well and take it out of the pan. Sprinkle some chopped green onion after serving.
