People in Changzhou praised the glorious image of Taiping Army, which destroyed horses, was invincible, made the Qing soldiers frightened and fled in panic, and made a cake with golden color, soft and crisp, oily but not greasy, and strange shape as a souvenir.
Why is the shape of this cake unusual? It's shaped like a horseshoe.
Why should it be like a horseshoe?
Because, the Taiping Army beheaded the Qing soldiers under the horse and defeated the Qing soldiers. The ancestors of the Qing Dynasty founded this country on horseback. They have great respect for horses, and men will shave their hair in ponytails. He also cut his two sleeves into horseshoes and used horseshoes as mascots.
Now that the Taiping army has defeated the Qing soldiers, it has cut off the horse's hoof. Q: If a good horse's hoof is cut off, can it still walk? Still a good horse? Therefore, horseshoe became the best trophy and memorial for Taiping Army to capture Changzhou. Making the cake into the shape of a horseshoe is the most memorable. What's more, eating "water chestnut cake" also means eating Qing soldiers and overthrowing the Qing Dynasty.
After "horseshoe crisp" was put on the market, it was deeply loved by Changzhou people and Jiangyin people.
Around the sixth year of Guangxu reign in Qing Dynasty (1880), Jiaoxi people from Wujin came to Jiangyin and opened a shop in Jia Zhu Lane in the urban area, namely "Gusu Daoxiang Village", which produced, wholesaled and sold tea and food, and took the lead in producing "water chestnut cake" in Jiangyin.
"Horseshoe Crisp" sells well in Jiangyin. "Gusu Daoxiang Village" opened in Guangxu for six years, and never stopped its business until War of Resistance against Japanese Aggression broke out. Until the outbreak of War of Resistance against Japanese Aggression, the Japanese army occupied Jiangyin and the "Gusu Daoxiang Village" was burned down. In the 28th year of the Republic of China (1939), the old shop "Gusu Daoxiang Village" reopened. However, the word "Gusu" was dropped from the store sign, and it became the real "Taoxiang Village" in Jiangyin. In the days to come, the name of "Daoxiang Village" will remain unchanged, and so will "horseshoe crisp". It has been passed down to this day and has become a scenic spot in Jiangyin.
