Dongsun old duck soup
Raw materials:
Half an old duck, winter bamboo shoots, Jinhua ham, ginger, salt, cooking wine.
Practice:
1 Wash the old duck, chop it into pieces, add ginger and cooking wine to the water, boil it, add duck meat to remove the blood, and take it out and wash it;
2. Rinse Jinhua ham slices slightly, slice ginger, and peel off the bamboo shoots in winter;
3. Cut the wrapped winter bamboo shoots into hob blocks, then put the duck ham and ginger slices of winter bamboo shoots into the pot together, and then add enough warm water;
4. Cover the lid, bring it to a boil over high fire, and then simmer it over low or medium fire until the soup is thick. It usually takes three or four hours, but it tastes delicious. Add a little salt to taste it before cooking.
