How to make mung bean paste
1. Rinse the mung beans with clean water. Add appropriate amount of water and soak for 1 to 2 hours. The soaking time can save time when cooking. Add purified water to the pot and bring to a boil over high heat. The volume ratio of purified water to mung beans is 10:1.
2. Put the soaked mung beans in. Boiling the mung beans in boiling water can save cooking time. The whole cooking process requires boiling the pot. Boiling the mung beans in the pot will release the sand faster. Bring to a boil over high heat, then reduce to low heat and simmer slowly until the bean skins float to the surface.
3. Use a slotted spoon to take out the bean curds. Removing the bean curds will not affect the fine texture of the mung bean paste. After removing the bean skin, use a spoon to press the remaining mung beans until they become pureed. Do not add water during the mixing process, otherwise the cooked mung bean paste will separate from water and sand.
4. The mung beans slowly turn into a fine and sandy mung bean paste. Serve it in a cup and drink it hot, or put it in the refrigerator before drinking it. If you like sweetness, you can add some rock sugar or white sugar while it's hot.
Tips
1. Be sure to use purified water, so that the cooked mung bean paste will be green and have the strongest heat-relieving effect. The ratio of mung beans to purified water is 1:10, just by volume.
2. Do not cover the pot during the whole cooking process. Open the pot and cook quickly.
3. Add enough water at one time. Do not add water during the whole cooking process, otherwise the cooked mung bean paste will separate from water and sand.
4. After adding the mung beans, bring to a boil over high heat. Change to low heat and cook until the mung bean skins float to the surface. Take out the mung bean skins. This will make the mung bean paste taste better.
5. After taking out the bean skin, press it continuously with a spoon to slowly turn the mung bean into a puree, and the mung bean paste is ready.
