Big-eyed tuna is a mid-range product in tuna. Frozen tuna is mainly provided by Japanese, Taiwan Province and Indonesian fishing boats after catching tuna all over the world. Last year, the number of frozen bigeye tuna entering the central wholesale market in Tokyo exceeded 23,000 tons, accounting for nearly 60% of the total tuna. As high-grade ingredients, the wholesale prices of black tuna and southern tuna are basically around 2,000 ~ 3,000 yen, and that of bigeye tuna is around 1000 yen.
