4. Next, filter the Xiancao liquid with a cloth bag for the final time. This step is to make sure that the finished product is smooth and tender without dregs or fine sand. The dust in Xiancao jelly will definitely affect the taste, which will be very disappointing.
5. Put 1 100ml of filtered Xiancao liquid into a pot and boil it. At the same time, use the remaining 350ml of Xiancao liquid to melt 75g of sweet potato starch, and it is best to filter it after stirring evenly. Carefully stir the starch particles in the filter screen and blend them into Xiancao liquid. Never discard the starch particles, otherwise the starch amount will not be enough.
6. When the Xiancao liquid in the pot is boiled, slowly add the mixed liquid of potato starch, and at the same time, quickly and constantly stir it to avoid caking of Xiancao paste. When there are big bubbles in the pot, turn down the fire slightly, keep stirring, and continue to cook for 6 minutes. It will be better if it takes a long time. Be sure to cook until it is very sticky. If you make a large amount of jelly, you must cook it for a longer time, otherwise the jelly will not be tough.
7. Pour the paste into a container to cool and let it coagulate.
