It's a food that many people love, not just in winter, but even in the hot summer months, many people like to have some shabu-shabu, but of course it's still more flavorful to eat in the cold winter months. But what many people may not know is that shabu-shabu has been around since ancient times and has been popular for hundreds of years, so when was it invented? And who invented such an enduring delicacy? Next I will explain for you.
Shabu shabu, also known as "mutton hot pot", began in the Yuan Dynasty, the rise of the Qing Dynasty, as early as the 18th century, Kangxi, Qianlong, the two emperors organized a few large-scale "Thousand Old Men Banquet", in which there is mutton hot pot, and then spread to the marketplace.
According to legend, Yuan Shizu Kublai went on an expedition to the south, when people were tired, eat boiled mutton, feel the flavor is extremely delicious. After the war, Kublai asked the chef to do it again, and the chef cut the mutton into even slices, with a variety of spices, and after shabu-shabu was so tender and delicious that Kublai gave it the name "shabu-shabu". Another theory is that Genghis Khan suddenly missed his hometown's hand-meat when he traveled south, so he asked the military cook to cook it. However, when the enemy suddenly arrived, the military cook who had just killed a good sheep and couldn't hurry to put it in the pot sliced it thinly and put it into boiling water to shabu-shabu, which Genghis Khan ate and then rushed to meet the battle. After returning to the camp, Genghis Khan asked the cook to make it again, and the generals ate it and everyone was so impressed that Genghis Khan gave it the name "Shabu Shabu".
Shabu shabu, also known as "mutton hot pot," began in the early Qing Dynasty, after the Manchus entered the country, as early as the 18th century, Kangxi, Qianlong, the two emperors organized several large-scale "Thousand Old Men's Banquet," which had mutton hot pot. Later spread to the market, operated by the *** Pavilion. The old capital hundred words " cloud: " mutton pot, for the cold years when the most common delicacy, must be eaten with the mutton museum. Such eating style, is the northern nomadic heritage to study and evolve, and become a special flavor. It is said that it was not until the Guangxu period that the old boss of Beijing's "Dong Lai Shun" lamb restaurant bribed a eunuch to steal the recipe for "shabu-shabu" from the palace, and it was only then that "shabu-shabu" could be sold in the city's most famous restaurants. The recipe was stolen from the palace and sold in the city's most famous restaurants.
Shabu-shabu is one of our favorite foods in the winter, so when did it exist in China? According to archaeological data, an early Liao dynasty mural painting unearthed in Aohan Banner, Zhaoda League, Inner Mongolia, describes how the Khitan people ate shabu-shabu 1,100 years ago: three Khitan people are sitting around a hot pot. Some of them are shabu-shabuing mutton with chopsticks in the pot, and on the square table in front of the hot pot there is an iron bucket with mutton and a plate with ingredients. This is the earliest known depiction of shabu-shabu.
A little later than the Liao frescoes, Lin Hong of the Southern Song dynasty also dealt with shabu-shabu in his book Qingsui shanjia. He originally praised the rabbit shabu-shabu he ate, not only detailing the method of shabu-shabu and the type of seasoning, but also writing a poem describing it, which reads, "Waves of snow on the clear river, the wind turns over and shines on the colorful clouds." This is due to the fact that the color of the rabbit meat slices in the hot soup is like the evening sun, hence the verse. This is why Lin Hong named his rabbit shabu-shabu "Paixia-supply". It should also be noted that after he said rabbit shabu-shabu, he added, "Pork and mutton are both acceptable," making this the earliest written record of shabu-shabu. According to Lin Hong's account, the meat was cut into thin slices and then soaked in wine, sauce, and chili peppers to flavor the meat before it was scalded in boiling water, which is not the same as the shabu-shabu method today.
Obviously, there are direct references to shabu-shabu as far back as the Liao and Song dynasties, but it is reasonable to assume that people ate shabu-shabu at the same time as hot pots, with little or no seasoning at first.
In Beijing, the term "shabu-shabu" is well known. It's a popular dish because it's easy to eat and has a delicious flavor. It is also known as "shabu-shabu" (涮涮大羊), because it is mainly cooked in copper pots in old Beijing.
The legend of shabu shabu originated in the Yuan Dynasty. In that year, Kublai, the first emperor of the Yuan Dynasty, was in command of a large army on an expedition to the south. One day, when he was tired and hungry, he remembered his hometown dish of mutton stew and ordered his men to kill the sheep and make a fire. Just when the cook slaughter sheep cut meat, scout horse galloped into the tent to report that the enemy is approaching. Hungry Kublai was waiting to eat mutton, he ordered the troops to pull out one side shouted: "mutton! Mutton!" The cook knows that he is irritable, so in a hurry, the knife cut down more than ten slices of thin meat, put in boiling water and stirred a few times, to be a change in meat color, immediately fished into a bowl, sprinkle down fine salt. Kublai even ate a few bowls turned on his horse to meet the enemy, the results of the flag victory.
In organizing the celebration of the banquet, Kublai Lie special point of the mutton slices. The chef chose the sheep tender meat, cut into thin slices, and then with a variety of spices, the generals ate after the praise. Chef busy welcome forward, said: "this dish has no name, please handsome master give name." Kublai laughed and replied, "I'll call it 'Shabu Shabu'!" From then on, "Shabu Shabu" became a palace delicacy.
