Sichuan's sprouts are mustard, which is made by cutting the tender stems of mustard into silk and pickling them. There are two kinds of sprouts: salty and sweet. Salted sprouts are produced in Nanxi and Luzhou in Sichuan, Yongchuan in Chongqing and Niuhua in Leshan. Sweet sprouts are produced in Yibin, Sichuan, and were called Xufu sprouts in ancient times. They are often salty in Sichuan. As an auxiliary material for fried minced meat, they are popular because of their salty flavor.
