The name Crossing the Bridge Rice Noodles comes from a touching story. A scholar came to the island to study, the virtuous and hard-working mother often made his favorite rice noodles for him to eat, but when he went out to the island, the rice noodles had become cold. When she was delivering chicken soup by chance, her wife realized that the chicken oil covering the soup could keep the soup warm, so she invented the method of putting the rice noodles into the bowl of soup to be cooked before eating.
Because you have to cross a bridge to get to the island, and in honor of this wise wife, later generations called it "rice noodles across the bridge".
