Ingredients: ribs, ginger, onion, spices (star anise, fennel, Anemarrhena asphodeloides, star anise, Amomum villosum, clove, incense.

Exercise:
1. Slaughter the ribs into 4cm segments, put them in boiling water to remove blood, and then take them out for cleaning. Slice ginger, wash onion and tie it into knots (3 pieces up and down);
2. Put the oil in the pot, add the white sugar (a little more, about one sugar, 2.5 or 3 oils) when the oil is still cold, and slowly fry the sugar with a small fire;
3. When the red bean syrup turns reddish brown, immediately pour the ribs into the pot and stir well, then add ginger slices, pepper and spices;
4. Stir-fry until fragrant, pour a small amount of rice wine and light soy sauce to color, add cold water, add salt and onion;
