How to kill turtles?
(1) Live kill

It is best for two people to slaughter live soft-shelled turtles directly, because the whole body of soft-shelled turtles is very precious, so they should be sorted, cleaned and preserved for later use. Therefore, the following three steps should be followed when slaughtering:

(1) preparation before slaughter; 1 sharp knife (for cutting blood vessels), 1 bamboo chopsticks (for pulling out the head and neck when a turtle bites), 2 small porcelain bowls, of which 1 contains a little white wine (for turtle blood), 1 only puts a little clear water (for turtle viscera), and quick scissors/kloc.

(2) Turn the tortoise over, with his back to the ground and his stomach to the sky. When it stretches its neck to the longest and turns over hard, grab its neck with your hands (you can also lead the turtle to bite with bamboo chopsticks) and put a small bowl full of blood in front of it.

(3) One person holds the turtle's belly and back with gloves, and the other person cuts blood vessels (arterial blood vessels behind the head and neck) at the back of the neck with a sharp knife, then controls the turtle's blood in a small bowl and stirs the blood in the small bowl with bamboo chopsticks. At the same time, people who hold the turtle's belly and back should lift the turtle to control the blood.

(4) After killing, go to the faucet to wash the turtle, and then open the abdomen with quick scissors. It is best to cut open the whole turtle's back from the side, then remove the lungs (useless) from the back first, and then take out the liver, heart and intestine. If it's a male, take out your testicles. If it's a female, take out the immature turtle eggs. Then, put these internal organs into a small bowl filled with water and wash them separately. After the turtle was cut open to remove everything from its stomach, it was cleaned.

⑤ Boil the water in the pot, then blanch the whole turtle in the pot and take it out. After taking it out, skin the turtle.

⑥ Take out the gallbladder in the liver after cleaning the internal organs (you can puncture the gallbladder when burning, sprinkle bile into the soup to enhance the taste, or soak the gallbladder in white wine for oral administration, which has the effect of clearing the liver and improving eyesight).

(2) Fatal killing

Wash the turtle temporarily raised, scald it directly with boiling water, then peel it, gut it and take out its internal organs. The method is to use half a basin of 80℃ hot water, put the soft-shelled turtle in hot water for 3 minutes, take it out after the skin is wrinkled, gently tear off the skin of the soft-shelled turtle by hand, and then clean it. Cut the turtle from the bottom of the skirt along the periphery, lift the lid and take out the internal organs. The advantage of death killing is that one person can do it, especially the turtle killer will not be bitten by a turtle, so it is more convenient to kill. The disadvantage is that this slaughter will deposit the blood of the turtle in the body, which will slightly affect the taste of the turtle (mainly when steaming).
