Steak 1000g, celery 1 tree, green garlic seedling 1 tree, 6 garlic heads, red pepper 1 piece, ginger 1 piece, 8 dried peppers, star anise 1 piece and tsaoko/piece.
method of work
1. Wash the steak, blanch it in water for 2 minutes, and then take it out.
2. Wash celery and garlic seedlings, cut them into 5cm long sections, cut red pepper into rhombic pieces, peel garlic and beat ginger.
3. Put the cattle into a pressure cooker, add ginger, dried pepper, star anise, Amomum tsaoko, cinnamon, fragrant leaves, kaempferia kaempferia, fennel, soy sauce, cooking wine and salt, add enough water to cover the steak surface, and cook for 20 minutes on medium heat after boiling over high fire.
4. After the pressure cooker cools down and exhausts, open the lid and take out the steak and spices.
5. Pour a proper amount of oil into the wok, add garlic cloves and stir-fry until the oil temperature is high.
6. Pour the steak into the pot and fry it dry.
7. Add the soy sauce and sugar and stir well.
8. Add red pepper, celery and garlic and stir-fry for a while.
9. Add a little salt to taste and serve.
