What is Sanyo cake powder?
Sanyo cake powder is cooked glutinous rice flour. Cake powder is a kind of processing powder (also known as Chaozhou powder), which is mainly ground into fine powder by frying glutinous rice flour. Powder particles are loose, generally clean and white, with high water absorption, and stick when it meets water. The products are soft and sticky, and are mostly used in Cantonese dim sum, moon cakes and water cake skins.

Cake flour can be divided into two kinds: spot flour and self-made flour. The former is rough in texture, but it is more effective and suitable when used in raw material production, while the latter is fine and suitable for powder back. A packet of glutinous rice flour, steamed in a steamer on white chicken skin paper for 10 minute, and then stir-fried with white fire for 10 minute. Glutinous rice must be steamed through the heat of steam to be fully cooked, otherwise it will often feel uncooked.
