"White tuna" refers to albacore tuna (also known as albacore tuna), but now it's misinformed that heteroscalene snapper (namely "oily fish") is also called white tuna, and some are called "super white tuna".
Oil fish is generally used for industry, and belongs to low-priced fish. In Zhejiang and East China Sea coastal areas, the price is relatively cheap, so many local sushi restaurants use it.
In Japan, low-priced sushi uses oily fish as white tuna, just like Japanese stew loach as eel, but the taste is similar. But in high-end sushi restaurants in Japan, albacore tuna is always used for white tuna.
