How to stir-fry the dried peas to be crisp:
1. Soak the dried peas in cold water for two days in advance and soak them completely.
2. Put the soaked peas in the refrigerator and freeze them completely, preferably for one day. After the frozen peas are thawed, use a dry rag to absorb the water on the surface.
3. Add the right amount of oil to the pot, heat it to 7% to 8%, and pour in peas.
4. Fry the peas until they float in the oil pan and fry for 2-3 minutes. The freshly fried peas are not crisp at all, but will be crisp after cooling.
5. The peas that have just been fished out of the oil pan are quickly sprinkled with salt and seasoning and stirred evenly. The dried peas fried in this way are particularly crisp.
