Yellow Rice Noodle Fritters Step by Step
1. Pour the yellow rice flour and glutinous rice flour into a large bowl.
2. Then put in yeast and sugar.
3. Pour water into the bowl in small amounts.
4. Knead the dough until it is as soft as the earlobes.
5. Roll out the dough and press it with your hands to form a cake in a steamer lined with a damp cloth.
6. Boil the water and steam for 20 minutes, then turn off the heat.

I. The ratio of yellow rice flour to glutinous rice flour is 3:1. The yellow rice flour makes the outer layer of the cakes more crispy, while the glutinous rice flour makes the cakes more sticky and smooth
2. Add 1 tsp of yeast to make the outer layer of the cake more attractive after deep-frying, and the texture will be more crispy
three. Add 1 tsp of sugar for better coloring during deep-frying and to give the yellow rice noodles a better texture
four. Steam the dough first before deep-frying, this will reduce the inhalation of oil, so that the taste of fried cake is fragrant but not greasy
