The difference between white cheddar and yellow cheddar cheese is that the color is different because of the different dye used.
Traditionally the color of cheese comes from the difference between winter and summer milk. In the past, dairy cows ate fresh grass in the summer, which had more fat-soluble pigments such as beta-carotene, so the cheese color would be orange-yellow, and in the winter, when they ate hay, which no longer had the carotene in it, the color of the cheese was more whitish.
