Ingredients: potatoes, milk, butter, chicken sauce, soy sauce, salt.
1. Slice the potatoes and steam them for about 15 minutes, so that chopsticks can be inserted easily.
2. Add 10g of butter, 1 pinch of salt, 30ml of milk and black pepper to the steamed potatoes.
3. Mash the potatoes into a fine mashed potato.
4: Line a bowl with plastic wrap and add mashed potatoes to set.
5: In a saucepan over low heat, cook 15g of butter until melted.
6: Add 15g flour and whisk constantly until smooth and light earthy brown.
7: Add 200ml of cool water.
8. Stir until the batter melts and boils.
9: Add 1 tablespoon of fresh chicken sauce, 1 tablespoon of soy sauce and moderate black pepper to taste.
10: Stir over low heat until thickened.
11, inverted bowl of mashed potatoes, drizzle with sauce.
