Winter bamboo shoots can be harvested from mid-October to early February every year, with famous areas in Jiangxi and Zhejiang. Spring bamboo shoots are the best excavation period from the middle and late March to Tomb-Sweeping Day every year, but they are widely distributed in May and beyond.

The nutritional value of spring bamboo shoots is higher, because spring bamboo shoots are tender buds, are in a vigorous period of nutrition, have fresh and tender meat, are known as "king of vegetables" and "eight treasures of mountains", and have a long history in China, while winter bamboo shoots are slightly harder in meat and cold in nature, and are not suitable for infants or menstruating women.
