I often use wax gourd to make sparerib soup, which tastes very weak, but I still feel something is missing. Once when I tried to make vegetable soup, I used some simple ingredients, such as wax gourd, tomato and Flammulina velutipes. Soup is particularly delicious, sour and refreshing, and it has become a common appetizing soup on the table. Simple, delicious and the next meal, sometimes without cooking alone, this meal is also very comfortable.
Prepare a melon, a tomato and a handful of Flammulina velutipes.
Wash the wax gourd first, remove the pulp, peel it, cut it into 2-3mm pieces and cook it.
After washing Flammulina velutipes, cut off the old roots and choose small flowers.
Wash the tomatoes, peel them, cut them into pieces, and cut them as small as possible, so that the tomato juice can be cooked quickly.
Heat a little oil in the pot, add tomatoes and stir-fry until soft, stir-fry the soup and squeeze it with a shovel.
Add wax gourd slices, stir well, and continue to stir for about one minute.
Pour in the right amount of water, and pour more without ingredients. Cover and bring to a boil, and continue to cook for five or six minutes.
Cook until the wax gourd slices become transparent, add Flammulina velutipes, cover the pot and continue cooking for 3 minutes.
Add a spoonful of salt and half a spoonful of sugar to taste, and the refreshing tomato juice and winter melon soup can be served. Sprinkle a little leek to taste better.
