Main ingredient: razor clams

Steps 1:
We prepare 500g of fresh razor clams, wash and soak them in clean water and set aside. Take ginger and cut it into diamond-shaped slices, garlic and cut it into thin slices, shallots and cut them into segments, millet peppers and cut them into rings, all put together and set aside.
Step 2:
After all the ingredients are ready, we first boil water to blanch the razor clams. When blanching first add a spoonful of salt, and then pour a little cooking wine to remove the fishy. Pour the razor clams into the pot, stirring constantly to make it evenly heated. Cook for about a minute and a half, after the shells of razor clams are all open, fish out and rinse with water to remove the sand inside, and then remove the razor clam sand threads one by one, so as not to affect the taste. After the sand line is removed, wash it again with water, so that it is safer and more hygienic to eat.
Step three:
Burn oil in the pot, when the oil is hot, pour onions, ginger, garlic and millet pepper and stir-fry the flavor. Then add 5 grams of chili sauce and 5 grams of black bean sauce, stir fry the sauce and stir fry the red oil. After that, pour the razor clams in, quickly turn the pan over and stir-fry well, then pour in some cooking wine to deodorize.
Step 4:
From the side of the pan, pour in a little water, then add 2g of salt, 1g of chicken powder, a little sugar for freshness and 1g of pepper, stir-fry to dissolve the seasoning and flavor the razor clams. Finally, drizzle a little chili red oil, turn well after the pot can be discharged to plate, sprinkle a little chopped green onions, delicious that is complete.
