First of all, pick a good piece of steak, about 3cm thick, with a little bit of grease. (The steak I bought in the picture had too much grease on it, which made it easy to eat and it wasn't thick enough.) Before frying, take it out of the fridge and leave it on the counter to come to room temperature, wiping off any blood with kitchen paper. Thaw frozen ones at least an hour in advance.

The browned steak should have this yellowish sheen to it. Wrapping the steak in tin foil alive greaseproof paper as soon as you remove it from the pan helps to allow the steak to fully absorb the gravy. Don't pour off the grease from the pan and proceed to make the sauce.

Mix one tablespoon each of sake, mirin, and Japanese soy sauce in a small bowl. In a saucepan over medium heat, add the julienned onion, the sauce mixture, and a small bowl of water. Let the soup thicken over high heat.
