How good is rice noodles?
Rice noodles, also known as Shahe noodles, are made by washing rice, grinding it into powder, adding water to make a paste, steaming it in a cage to make it into flakes, and then cutting it into strips after cooling. It is known as kuey teow in Fujian and Chaoshan areas and among the Chaoshan Chinese in Singapore. It is a common snack staple in Guangdong, Guangxi and Southeast Asia, China, and originated from Shahe in Guangzhou around 1860, hence its name. River vermicelli is rich in carbohydrates, an important substance that constitutes the body; stores and provides heat; maintains energy necessary for brain function; regulates fat metabolism; provides dietary fiber; conserves protein; detoxifies; and enhances intestinal function.
