Fried Enoki Mushrooms with Tomatoes
Ingredients: 1 handful of enoki mushrooms, 1 tomato, 2 eggs, 2 green onions, 1 tsp of salt, 1 tsp of light soy sauce.
Method:
1. Prepare the required ingredients.
2. Cut off the roots of the enoki mushrooms, rinse them, and break them into small florets.
3. Blanch the enoki mushrooms in a pot of boiling water for about 2 minutes, remove them and remove the moisture.
4. Blanch the tomatoes with hot water to remove the skin and cut into pieces.
5. Crack the eggs into a bowl, wash and chop the green onions, mix with the eggs, add an appropriate amount of salt, and break them up for use.
6. Heat the oil in the wok, pour in the egg liquid, stir-fry the eggs until cooked, and serve.
7. Leave the base oil in the wok, pour in the tomato cubes and stir-fry until the tomatoes are soft. Add the enoki mushrooms and stir-fry. Add 1 tsp of salt and 1 tsp of light soy sauce and stir-fry evenly.
8. Pour in the scrambled egg cubes, stir-fry together for 1 minute, and then take it out of the pan and put it on a plate.
