6. When cooking noodles and dry-cut noodles, do not boil the water in the pot too much. After the noodles are put into the pot and boiled, it is also advisable to cook them over medium heat, because the dry-cut noodles and dried noodles themselves are very dry. If the fire is too high and the water temperature is too high, a mucous membrane will form on the surface of the noodles, and the heat cannot be transferred to the inside, which will easily form a hard core and cause the noodle soup to gelatinize. When cooking over medium heat, add some cold water as you boil so that the noodles are heated evenly.
7. When cooking wet cut noodles and self-rolled noodles, you need to boil the water under it, and then use chopsticks to pick it up a few times to prevent the noodles from sticking. Bring to a boil over high heat, add water once every time you open the pot, add water twice, and the pot is ready. When cooking wet noodles, be sure to use a strong fire, otherwise the temperature is not high enough and a mucous membrane will not easily form on the surface of the noodles, and the noodles will melt in the water.
