The pearls in milk tea are not sago. Pearls and sago are two different foods. 01. Pearls and how to make them
The pearls in milk tea are spread from Taiwan. The former name of pearls was "pinyuan", which was introduced to the mainland from Taiwan in the Qing Dynasty. At that time, Taiwan presented "pinyuan" as a birthday gift to the Empress Dowager Cixi, who was full of praise after eating it.
The main ingredient of pearls is cassava flour. Add water to the cassava flour and knead it into small balls. Then boil it in water for 50 minutes. Be sure to stir it constantly while cooking to prevent it from forming. Stick to the bottom of the pan. After cooking, you cannot take it out immediately. Instead, turn off the heat and simmer in the pot for 20 minutes, then fish out the pearls. But the pearls at this time have no taste, so you need to add some syrup to add flavor to them, so that the pearls taste chewy and delicious. 02. Sago and its preparation
Sago originates from Malaysia. It is starch extracted from the sago palm, so its main component is starch. The sago on the market is very cheap now, and you can eat it for a long time if you buy a bag.
The method of making sago is simpler than that of pearls. Just pour the sago into boiling water and cook for 15-20 minutes. When it becomes transparent and only a little white, turn off the heat and continue to simmer in the pot for 10 minutes. Take out the sago and put it in a filter spoon, rinse it with cold water and filter it two to three times. 03. The difference between pearls and sago
Pearls and sago are quite different in terms of composition, appearance and taste. First of all, the main ingredient of sago is starch, while the ingredient of pearls is tapioca flour. Secondly, sago is small white particles, while pearls are larger and not white in color, usually yellow. The black pearls in many milk tea shops are black because they are cooked with black syrup.
The most important difference is that their tastes are very different. Pearls are chewier and softer; although sago also has a QQ texture, it is generally not edible because it is smaller. Will chew it.
So, not only are the two not the same food, but they are also quite different.
