Noodles are also called Helou noodles, Heluo noodles, Huoluo noodles, etc., Fuyang, Anhui is called Gelatiao, and Longdong, Gansu, Lao Yang's hometown, is also called cold noodles and bed noodles, which means a kind of noodles pressed by a wooden tool called "bed" based on the principle of leverage. Noodles are smooth and tasty, cold and hot, and are deeply loved by people in the north. In the past, when life was hard, people used to make miscellaneous grains such as sorghum, buckwheat, corn and oat noodles. Now life is good, and most of the noodles are pressed with white flour. However, in Shaanxi, Shanxi, Hebei, Inner Mongolia and other places, people still like the noodles made of coarse grains, most of which are made of buckwheat, and the health care function of coarse grains is mainly valued. Buckwheat belongs to low-gluten flour, so making buckwheat noodles must be matched with a certain amount of white flour. Lao Yang tried many times to make buckwheat noodles at home, adding more white flour and losing the flavor of buckwheat. There is less white flour, and the noodles are not stiff and broken. Through online search and repeated attempts, I finally found a solution, and now I am willing to share it with you. 1. Spoon buckwheat flour and white flour into a pot, buckwheat flour and white flour1:1,and a little more white flour is ok. Add two teaspoons of edible alkaline noodles to the white flour, and add a proper amount of starch (potato starch and sweet potato starch, the addition amount is about one tenth of the white flour).
Second, pour the freshly boiled water on the soba noodles a little bit and stir them quickly with chopsticks. (Buckwheat noodles are boiled in boiling water, which is the secret of making Buckwheat Hele.)
3. Make the remaining white flour into dough with warm water, and then mix and knead the two kinds of dough together, the hardness is slightly harder than that of jiaozi flour. Cover the dough with a damp cloth and bake it in a basin for 30 minutes. During the period, it can be taken out and repeatedly rubbed on the panel.
Fourth, boil water in the pot, cut the dough into strips, stuff it into the hele machine, and start pressing noodles. After the water rolls twice, take out the cold water and put it in a bowl.
