Potato-roasted pork ribs
Ingredients
500g pork ribs, 1 potato, 1 green pepper, 1 red pepper, 3g ginger, 2 cloves garlic, 2 star anise 1 tablespoon of light soy sauce, 2/1 teaspoon of dark soy sauce, 1 tablespoon of cooking wine, 2/1 tablespoon of oyster sauce, and a little salt.
Method
1. Cut potatoes into cubes, cut green and red peppers into large pieces, shred ginger, and slice garlic.
2. Put the pork ribs into the pot under cold water, add the green onion knots, cook until the bleeding water drains out and drain.
3. Heat oil in the pot, add pork ribs and stir-fry.
4. Stir-fry the pork ribs over high heat until slightly charred, add ginger, garlic, and star anise, and continue to stir-fry for a while.
5. Add light soy sauce, dark soy sauce, cooking wine, and oyster sauce, and stir-fry until colored.
6. Pour in water to cover the ribs, bring to a boil over high heat, and simmer over low heat for 30 minutes.
7. Then add the potatoes and simmer until the potatoes are soft and cooked, then add the green and red peppers.
8. Stir-fry over high heat until the juice is reduced and add a little salt.
Sichuan Style Potato Braised Pork Ribs
Ingredients
300g bones, 300g potatoes, 10g minced ginger, appropriate amount of boiling water, 1.5 tablespoons of Pixian Douban, soy sauce 1.5 tablespoons, 0.5 tablespoons dark soy sauce, 1 tablespoon cooking wine, a little sugar, 2 star anise, 20 peppercorns.
Method
1. Cut the potatoes into cubes, wash them with water to remove the starch on the surface, drain and set aside.
2. Blanch the bones in boiling water until they change color, drain and set aside.
3. Put a tablespoon of oil in the pot, fry the potato pieces until golden brown, and remove.
4. Add another tablespoon of oil to the pot and fry the bones until the surface is golden brown.
5. Add Pixian watercress and minced ginger and stir-fry until fragrant.
6. Add soy sauce, dark soy sauce, cooking wine, and sugar and stir-fry evenly.
7. Add boiling water to cover the bones, add star anise and Sichuan peppercorns. Bring to a boil over high heat, then simmer over low heat.
8. After cooking until the bones are crispy, add potato cubes and cook over medium heat for 5 minutes.
9. Finally, turn on high heat to drain the soup.
