What does the keel in the potato stew keel mean?
Keel generally refers to the backbone of a pig.

Stewed keel with potatoes:

1. Wash the bought keel. Put cold water in the pot. Add a tablespoon of cooking wine to the water to remove the fishy smell.

2. Before the water boils, peel and cut the potatoes, and cut the parsley and onion into sections for later use.

3. After the water boils, skim off the floating foam and fill out the keel.

4. Put a proper amount of peanut oil in the hot pot, stir-fry the pepper, star anise and dried pepper, pour in the potato pieces and stir-fry, add soy sauce to taste, stir-fry a few times, and add the cooked keel to stir-fry. Then, heat the water in the pot without potatoes and keel. Cover the pot and stew.

5. When the water in the pot is about to dry, add some salt and monosodium glutamate to taste and stir fry. Turn off the heat, then sprinkle with chopped parsley and chives. A keel stewed potato is finished.
