Daikon radish kimchi is the most common homemade dish in Korea and a must-have appetizer in restaurants.
Ingredients
2 white radishes (about 3-4 pounds), 2 tablespoons of salt, 1 tablespoon of sugar, 3 tablespoons of fish sauce, 3 tablespoons of red pepper flakes, 1 tablespoon of finely chopped garlic, 1/2 tablespoon of finely chopped ginger, and 4 green onions, cut into 5-centimeter pieces
How to do it
1. Peel and cut the radishes into 2.5-centimeter pieces, and then put them into a large bowl, add salt and sugar Mix. Marinate for 1 hour.
2. Mix fish sauce, red pepper powder, minced garlic and ginger in a small bowl.
3. Strain the water from the white radish, then sprinkle the fish sauce mixture on top of the radish and mix well. Add the scallions to the mix.
4. Finally, put the mixture in a sealable jar and let it sit at room temperature for 1 day, then store it in the refrigerator.
