Two bitter melons and three eggs.
Method/Steps
1. Prepare the ingredients: two bitter melons and three eggs, washed separately.
2. Chop the peppers and green onions, beat the eggs with half a spoonful of salt, and set aside.
3. Cut the bitter melon in half, scoop out the flesh with a metal spoon, cut it into thin slices, put it in a bowl and add a tablespoon of salt to drain the water.
4. Boil water in a pot, pour the pickled bitter melon into the boiling water, blanch it for about a minute, take it out and drain.
5. Put oil in the wok. When the oil is hot, add the chopped green onions and peppers and stir-fry until fragrant. Add the bitter melon and stir-fry for more than a minute.
6. Turn off the heat, pour the egg liquid on the bitter melon, and stir-fry carefully with a spatula after the egg liquid at the bottom solidifies. After the egg liquid is basically formed, turn off the heat, use the residual heat in the pot to solidify the egg liquid, and serve on a plate.
Notes
1. Salting it can remove some of the bitterness. If it is acceptable, you can omit the blanching step.
2. Bitter melon has been pickled with salt, and salt is added to the egg liquid. There is no need to add additional salt when frying.
