Stir-fried and roasted with tender chicken and red pepper. The dishes are red, white, green and yellow, and the chicken is tender, sour and delicious. At the end of the Qing Dynasty and the beginning of the Republic of China, this dish was introduced to Changsha, and gradually became a famous banquet dish after being publicized by official diners such as Xi Baotian, the general of Xiang Army, and Tang Shengzhi, the general of the Republic of China, and restaurants all over Hunan followed suit.

This dish was selected as one of the four traditional Hunan dishes in the 20 10 Shanghai World Expo. The production steps are roughly as follows: slaughter the chicken, cook it in a soup pot, take it out when it is seven ripe, let it cool, and cut it into small strips. Heat oil in a wok to 80% heat, stir-fry chicken strips, shredded ginger, vinegar, minced pepper, etc., then stew fresh meat soup until the soup is dry, add onion and sesame oil, and serve.
