1. Rinse the casing with the raw waste bought from the market.
2. Use a special oyster knife or flat-head screwdriver to open the oyster shell, remove the oyster meat, and clean it briefly. There is a little trick to remove the oyster meat. From the joint between the left and right shells at the back of the shell, open the upper shell and disconnect the muscle column, then the oyster meat can be easily removed. You must pay attention to safety during the whole process and be careful of getting hurt. Especially the hand holding the battery needs to wear thick gloves, as it can easily be scratched by the sharp edge of the battery case.
3. Preparation of traditional crispy fried coke: Take a bowl, add 35 grams of wheat flour, 15 grams of tapioca starch, 50 grams of water, and 1 gram of yeast powder, mix well, and ferment for 25 minutes. After a layer of concentrated hot bubbles forms on the surface, add 10 grams of cooking oil and mix evenly, and the crispy batter is ready. Prepare a little bit of crispy fried char, use a spoon to scoop it up, and when you pour it, it will flow down in a slightly rough edge.
4. Take out the oyster meat and do not need too much seasoning. Add 1 gram of salt to adjust the base taste. Roll a circle in the flour and stick a layer of separated flour. The sticky wheat flour must not be too thick, just a thin layer will suffice.
5. Add an appropriate amount of cooking oil to the pot, bring to a boil and bring it to a boil, about 160-180 degrees, and add the raw flour. After putting it in, it will light up in an instant, float down, fry until golden and the light yellow color on the surface will set, then pick it up. When the temperature reaches 70% heat, about 200℃, put it in again and fry it again until golden brown on both sides. Remove it to control the oil and replenish the water.
6. Place the fried raw rice noodles into a flat plate or bamboo product with waterproof paper at the bottom, and then you can enjoy it while it is hot.
