Half a white radish

How to make radish with aged vinegar

Wash the white radish.

Take half a white radish. No need to peel it. Cut into thin slices and sprinkle with a little salt. Grip evenly and let it sit for 1 hour until the water comes out of the radish.

Crush the garlic, slice the ginger, and dice the spicy millet and put it in a large bowl.

Dark soy sauce and light soy sauce.

Pour the vinegar and light soy sauce into a bowl and just soak the garlic and ginger slices.

The water will drain out after 1 hour of pickling the radish.

Place the drained radishes in a bowl, wrap them in plastic wrap and refrigerate them overnight before taking them out and eating.
Cooking Tips
When pickling radish, just add two tablespoons of salt. It doesn’t need too much. Grip it evenly with your hands and put it in a clean basket to easily drain out the water. Add an appropriate amount of rock sugar. It can neutralize the sour taste of vinegar.
