The required ingredients are 500g of river shrimp, 50g of leek/kloc-0, and appropriate amount of ginger and garlic.

Step 1: After washing the shrimps, put them into a pot and soak them in a little salt and cooking wine for 10 minute. After that, rinse it with clear water repeatedly and drain it for later use. Doing so can remove the fishy smell of river shrimp.
Step 2: Wash the leek, cut it into inches, and separate the leek roots and leaves. When cooking, in order to be mature and consistent, the leek roots should be cooked first, and then the leek leaves should be cooked.

Step 5: Stir-fry the shrimp in Xiaohe until it becomes crispy, and add ginger slices and garlic slices to saute.
Step 6: Add a proper amount of salt.
Step 7: Add leek root and stir fry quickly, and add proper amount of cooking wine, soy sauce and pepper.
Step 8: Add leek leaves and stir-fry quickly until the leeks are wilted, and immediately take out the pot and put on the plate.
