Specific steps
The first step
Select ingredients, clean and peel. Choose fresh yams that are smooth, spot-free, and straight in shape; remove mud and dirt and wash them in clean water; scrape off the outer skin with a paring knife or bamboo blade, and dig out the black spots

Slice. Cut the peeled yam into 0.2-0.3 cm thick slices

Cure and blanch. Immediately after slicing the yam slices, immerse them in 0.5% sodium bisulfite aqueous solution for discoloration treatment. After soaking for 2-3 hours, remove them; rinse the removed yam slices with clean water to remove the liquid and colloid, and then place them in a boiling water pot for blanching for 6 seconds. -8 minutes, be careful not to boil it, take it out and rinse it with water to remove the mucus
Step 4
Dry it. Place the blanched yam slices in a drying room or oven at 60-65°C for 20 hours. During the drying process, pay attention to inverting the pan 1-2 times to ensure that the yam slices are baked evenly

Crush.
