Cod cooking methods:
Cod can be cooked in a variety of ways, dipping in sauces is particularly tasty. Cod can be canned, dried or salted, and cod roe can be eaten fresh, smoked or salted. Cod's tongue and liver can also be eaten. Haddock is usually used for smoking or pickling, and small cod is usually made into dried fish.
To remove the salt from cured cod, the fish is placed in a container, which is placed in a sink with a thin stream of water filling it, and as the sink is filled with water, the salt is washed away. The dried fish needs to be soaked in water for 8 to 12 hours before cooking. When cooking cod, it should not be brought to a boil, but can be added to the broth and simmered over a slow fire for about 8 minutes, or it can be added to the liquid that has already come to a boil for a little while, and then the pot can be quickly removed from the stove and set aside for 15 minutes.
