1. Wash Volvariella volvacea and green pepper with clear water, cut the green pepper in half, dig out the pulp and seeds of the middle green pepper, rinse with water, and cut into pieces with uniform size. Straw mushrooms can be put into a bowl for later use. Select fresh pork, clean it, cut it into thin slices with uniform size, squeeze out the water, put it in a bowl, pour in a proper amount of soy sauce, cooking wine, soy sauce, white pepper powder and oyster sauce, and stir well with chopsticks.
2. Stir the seasoning evenly, then add some water and starch to stir, finally add some vegetable oil to stir, and finally let it stand and marinate for 10 minute. Heat oil in a pot, add ginger slices and stir-fry until fragrant, then pour in chopped straw mushrooms and half a bowl of water first. Stir-fry for 5 minutes on medium heat until the straw mushroom is tender and smooth, and put it in a bowl for later use.
3. Burn the oil in the pot, first add the meat slices and stir well. After the meat slices change color, you can pour in the fried straw mushrooms and green peppers, add some edible salt to taste, and stir-fry the green peppers until they are broken.
