Cut the brittle bones into small pieces (8mm wide), wash them with clear water and drain them. Garlic and ginger are minced for use.
Add cooking wine, vegetable oil, salt, black pepper, monosodium glutamate and pepper to the crispy bones, mix well and marinate for two hours.
Put oil in the pan. When it is 70% to 80% hot, add dried Chili, pepper, star anise and cinnamon. After frying, add crispy bones. Stir fry with spatula from time to time until it is golden brown (about 8 minutes). Take out the pan.
