1, first knock out the fish head with a knife, put the fish flat on the chopping block and scrape off the scales.

2. Turn the fish head to yourself, with the fish tail facing outwards, the fish belly to the right and the fish ridge to the left, and cut it from the fish gills to the fish tail (near the anus) with a knife.
