1. Peel potatoes, cut into thin slices, and then shred them.
2. Put it in a pot, soak it in clear water, change the water twice in the middle, and wash off the starch in the potatoes, so that the shredded potatoes with starch are washed off, and the taste is particularly crisp after frying.
3. Cut the potatoes and fish them out. Don't drain the water deliberately. Just add some water and fry them. Shred the green and red peppers.
4. Heat the oil pan, pour in the shredded potatoes and stir fry for about 1 minute. If it feels too dry, sprinkle some water appropriately. Add 1 teaspoon salt and mix well, then add 1/2 teaspoons sugar and mix well.
5. Add green and red peppers, shred, pour in 1 tbsp rice vinegar, stir-fry evenly and serve.
