Douban mullet
Ingredients: 1 net mullet.
Ingredients: 50 grams of fat and thin diced pork, 30 grams of cooked mung beans, and 30 grams of peanut kernel with sauce.
Seasoning: chopped green onion10g, Jiang Mo10g, minced garlic10g, minced red pepper, Pixian watercress, pepper, Jiu Nan, soy sauce, refined salt, monosodium glutamate, starch and peanut oil.
Practice of douban rouge fish
Cut open the live mullet, remove scales, gills and intestines, put a flower knife on each side of the fish and blanch it in a boiling water pot. Put oil in the bottom of the pot, add the fat diced meat, cooked green beans and peanut kernels in turn, stir fry, then add chopped green onion, Jiang Mo, minced garlic, minced red pepper, Pixian watercress, Sichuan pepper, Jiu Nan, soy sauce, refined salt, monosodium glutamate and a proper amount of clear soup, add mullet and simmer over low fire until the soup is over 60%.
