The menu introduces Sichuan famous dishes, spring vegetables with thin-skinned pork and newly listed tender garlic, which are fragrant and slightly spicy, tender in meat and better in flavor. Because the sliced meat is thin and long, it is also called "white meat in the clouds".
material
400g pork leg with skin, 25g garlic, 25ml red oil, 20ml soy sauce, 30ml cold soup, 0.5g white sugar/kloc-5, 0.5g monosodium glutamate, a little white sesame and 0.5g refined salt.
working methods
1. Wash the pork, remove the residual hair, cook it in a cold water pot until it is just cooked, and then soak it in the original soup until it is warm. Then drain the warm cooked pork, cut it into thin slices about 8 cm long and 4 cm wide, and put it in a plate.
2. Mash garlic, add salt and cold soup to make paste, then add red oil, soy sauce, sugar and monosodium glutamate and mix well.
3. Pour the mixed juice on the sliced meat, and finally sprinkle with white sesame seeds.
Special garlic and white meat

250g of pork belly, 50g of garlic, 50g of soy sauce, 30g of chili red oil, 2g of sesame oil 1 0g, 2g of salt, 0g of sugar10g, and broth1teaspoon.
working methods
1. Scrape the pork belly clean, put it in a soup pot, add ginger, onion and star anise, and cook until the skin is soft, so you can easily insert it with chopsticks.
2. Soak in the original juice for 20 minutes.
3. Take out and drain the water. For the convenience of slicing, put it in the refrigerator for about 30 minutes.
4. Slice the meat, about 10 cm long and about 5 cm wide.
5. Mash garlic into a paste, add salt and a spoonful of broth to make it into a thin paste, and put it in the microwave for 30 seconds to make the garlic taste stronger.
6. Add 50g of soy sauce, 30g of chili red oil,10g of sesame oil, 2g of salt and10g of sugar into the garlic paste and mix well.
7. Pour the juice on the sliced meat and you can start.

1. Adding a proper amount of coriander to the seasoning is more fragrant. I didn't add coriander because I didn't buy it. 2. heating garlic paste in microwave oven can make garlic taste stronger. 3, the variety of spices should not be too much, otherwise it will change the unique flavor of this dish.
