Tools/ingredients: 1 eggplant, 3 eggs, 1 spoon salt, 1 spoon soy sauce, 2 parsley, ginger, onion and garlic.
1. Wash and slice eggplant, then soak it in clear water for 5- 10 minutes, and then rub it dry for later use.
2. Break the chopped green onion eggs, then fry the eggs and remove them for later use.
