1. Soak the dry yeast in warm water for 3-5 minutes. The amount of yeast you use is the amount of salt you add every time you cook.
2. Take about half a catty of dry noodles, add a little salt and sugar, and mix well.
3. Pour in the yeast water and knead the dough.
4. Just pay attention to the amount of water used when kneading the dough. Once the dough feels softer, you can start to knead it. I usually make the dough at night, put it in the pot, and let it sit overnight until it rises to twice its original size and there are dense honeycomb holes on the surface.
Kneading the dough: This time, knead the dough that has risen for about 200 times. The purpose is to squeeze out the air bubbles in the dough, and the dough will become smoother and more uniform.
Noodles: Divide the kneaded large dough into the small dough you want, then knead it smoother and shape it into a round cake. Be careful not to make the dough thin. Cover with a damp cloth and let it sit for twenty minutes. If you like sweetness, put some sugar in the small dough, wrap it up and shape it into a cake shape, which will make it more delicious.
Preparation:
1. Use an electric baking pan to bake until steaming, then wait for another half minute. Open the lid, turn it over, and bake again.
2. Wait for half a minute after steaming, and sear both sides until light brown, then serve.
