Cream Mushroom Soup
[Ingredients] Butter 3 taels, flour 3 taels, clear soup 5 taels, milk 2.5 taels, mushrooms 3 taels, a little salt and MSG.
〔Method〕Put butter in the pot, heat it up, add flour, stir and stir-fry slowly over warm fire. When the flour turns slightly yellow and fragrant, immediately pour one-third of the boiled milk, put the pot on a low heat, beat hard with a stir stick, and at the same time slowly pour in the remaining milk. When the remaining flour is beaten into a white and shiny paste, stir in the clear soup until it becomes a sticky soup. Finally, cut the mushrooms into slices, pour them into the cream soup together with the original juice, bring to a boil, then add salt and MSG, and it's done.
