The practice of pickling radish
Step 1: Prepare the ingredients.
My peanuts are still skinned. I peel them first, and then soak them in clear water for 2 hours, which is more delicious.
When the peanuts are soaked for about an hour, we wash the radish skin and pickle the radish with the skin, which makes it more crisp to eat. So don't peel the radish. Cut the radish into radish slices and put them in the pot.
Add 30 grams of salt and marinate for one hour by hand to kill the water in the radish.
This step is very important. If you don't kill the water in radish in advance, radish will produce a lot of water when it is pickled, which will also affect the taste.
Pickled radish. Put the soaked peanuts into the pot and cook for about 3 minutes. Don't cook for too long. Peanuts soften easily and taste crisp.
Step 2: Prepare seasoning.
Prepare a small bowl, put some fragrant leaves, two cinnamon, two star anise, a pinch of green pepper and some dried peppers.
When the pot is hot, pour in the spices and stir-fry for a while. Be careful with low calories. If the fire is too big, it is easy to fry the seasoning.
After smelling the fragrance, add 20 grams of soy sauce and 20 grams of balsamic vinegar, then pour in a proper amount of water and add a little rock sugar. Add a little soy sauce and mix the colors evenly.
After the fire boils, turn to low heat and cook for 3 minutes to get the flavor of the sauce, then pour out the marinade and set aside to cool.
Prepare a handful of millet pepper, wash it and cut it into sections with an oblique knife. Slice garlic and cut ginger into diamond-shaped pieces and put them together.
At this time, the radish is also marinated. We drain the water inside, put the radish into the cotton cloth and squeeze the radish juice hard, so that the radish can absorb the juice more easily.
Step 3: Mix the radishes.
Then put the radish slices into the pot, pour in ginger, garlic, millet pepper and peanuts, and fully grasp them with your hands. Seal with plastic wrap and marinate for one day and one night.
Simple and easy pickles are cured. If you eat it in summer, it is best to pour some high-alcohol liquor before sealing to prevent deterioration. The most important thing is that pickles can't see oil. No matter whether you pickle vegetables in bottles or jars, you must ensure that there is no water and no oil.
Pickled pickles are not afraid of being eaten. As long as they are kept for ten and a half months, they will not go bad and can be safely eaten.
