Steps
1. Add the weighed water and other ingredients to the flour, and mix the dough . Knead into a smooth dough. Then cover and let rise for 15 minutes.
After rising for fifteen minutes, lift the noodles to ensure a smooth surface. Then cover and let rise for two hours (or place in a plastic bag).
Stretch the risen dough into strips, making sure the thickness is even and the width is consistent. Then cut into strips. 500g of flour can be cut into approximately 20 sections. Let the two sections overlap. Press with the back of the knife.
2. Heat the oil. After reaching the predetermined temperature (the oil temperature should not be too high, it must be before the oil smokes), stretch the pressed strips and put them into the oil pan. When the fried dough sticks float in the oil, keep turning them. Let both sides of the dough sticks be heated evenly to help the dough sticks expand.
3. When the fried dough sticks are fried until golden brown, take them out of the pan, control the oil, and they are ready to use.
Tips
The oil temperature should not be too high, and the strips must be turned in time.
